SQL and NoSQL databases have fundamentally different characteristics.

I choose NoSQL when data is semi-structured or its format changes frequently, when I need massive horizontal scalability, when read and write speed is more important than strict consistency, or for specific use cases like caching with Redis or social networks with graph databases.
